  In the nineteenth century, the Dutch developed machines to press cocoa beans and extract the cocoa butter, a bitter-tasting fatty substance. This not only gave hot chocolate a more pleasing flavor, but also paved the way for the invention of chocolate bars. Chocolate makers began mixing the cocoa butter with milk. Through trial and error, they learned to make delicious candies that were as smooth as velvet in the mouth.

  These new solid chocolates became very popular. When manufacturers started adding nuts, fruit, and toffee to their chocolate bars, chocolate found an even wider audience. Americans, in particular, developed a taste for chocolate.

  During World War II, the US military distributed chocolate bars to its soldiers. The creamy, sweet taste had a soothing effect on the soldiers, helped keep them alert, and reminded them of the sweetness of home. From Mexico, to Europe, and back to North America again, the humble cocoa bean has truly“bean”around the world and back again.

  19世纪时,荷兰人制造出压榨可可豆的机器,以提取出可可油,这是一种苦味的脂类物质。此举不但使热巧克力的风味更佳,更促成了巧克力棒的发明。巧克力制造商开始将牛奶混入可可油中。经过不断的反复试验,他们终于得以制造出美味的巧克力糖,尝起来就像丝绒般柔滑顺口。

  新发明的固体巧克力开始大受欢迎。巧克力制造商开始加入坚果、水果和太妃糖后,喜爱吃巧克力的人更多了。其中又以美国人尤甚。

  二次大战期间,美军将巧克力棒分发给士兵们。这种乳滑、甜美的滋味对士兵具有抚慰作用,有助于他们保持警觉,并让他们想起了家乡的温暖。从墨西哥到欧洲,再回到北美洲,不起眼的可可豆已成功地风靡全世界并回归故里。
