  I was transferred to Banquet as assist manager, responsible for 15 different function rooms in 3-5th floor. I have managed over 150 meal parties (western and Chinese) and 400 different style of meetings for GE, BMW, 3M ect.

  I co-worked with the Sales department, communicated with engineering, house keeping, front office, accounting and kitchen for preparative function.The staff training for service skill and knowledge, maintain high standards and all equipments of Banquet department.

  上海欧派餐饮有限公司任营运经理 The Oopium Club Restaurant

  I joined the Oopium in Dec 2002 for preparation to construct, it's modern design and décor with tradition Chinese artifacts same as the opium club restaurant in Luxermburg. The restaurant served contemporary French cuisine with reasonable price, cool laid-back music and friendly service. Wonderfully relaxing décor and sophisticated atmosphere that peoples really have to be felt to be appreciated. I trained the service staffs that they were male around 40 age and never had experience before for service science and skill, knowledge of beverage and wine service, hygiene, courtesy English. I built the restaurant operation manual that different with hotel and more detail for all of operate, include rules of employ, accounting, purchasing and stock, kitchen and bar cost control, operating equipment policies and procedures. Also helped the French chef to manager the kitchen staff and discuss food promotion.

  At business side we had cooperated with wine supplier holding the wine party and wine dinner to increase the revenue. Made a very comprehensive wine list special for French wine. The wine sale was 50% of the restaurant income.After the restaurant operate smoothly, my job changes to Sales and Marketing, and keep good relation with our customers and media. The restaurant has hold 200 persons cocktail party for Am chain and 50 persons dinner party in end of May.During Aug and Sep, we have done very successful dinner party for Sopexa, Ceibs, Roch, and press conference of Epic Music Entertainment Co. for singer Wu.At Oct, the owner sold his stock because the its value is up his expectation, and he backs to Paris open new restaurant. I helped the transformation until end of my job contract.

  2002 年12月筹建上海欧派餐饮有限公司-独品西餐厅(OOPIUM CLUB RESTAURANT),参与餐厅的前期设计和招标。以卢森堡独品餐厅的风格蓝本,配以红绿色彩与灯光相结合,营造出神秘、优雅的用餐氛围,独品一开张就在顾客中赢得好评。03年1月,开始招聘员工,为在整体上配合总公司在餐饮服务风格设计和经营理念,餐厅聘用的服务员以中年男性为主,他们有厨房工作经历,但从未接触过西餐服务,我的主要精力集中于餐厅服务培训,从服务的理念,服务礼仪礼节,餐饮服务的基本知识和西餐的服务程序,食品安全,服务的基础英语,酒水的基本常识和葡萄酒常识的培训。经过一个月的强化训练,从中挑选进步快,有潜力的作为餐厅服务和管理员。

  餐厅开张伊始,管理后场厨房运作和成本费用控制,规章制度和服务标准的设定,制定餐厅的经营手册,协助年轻的法籍厨师长建立物料的采购和验收机制,厨房标准菜谱的制作和新菜品的开发,成品的成本控制。负责餐厅营运费用的控制和营业计划的编制。引入桃乐丝、名特、ASC、TBC、保乐利加等葡萄酒供应商举办葡萄酒品尝晚会和促销活动,树立餐厅的知名度。4月以后,餐厅的日常运作进入正轨,工作的重点转向销售与市场推广,引进法国品牌时装合作举办餐厅的开业晚宴与时装表演相结合,邀请到35家媒体的广泛参与报道。5月下旬,为美国商会举办200人酒会和另一家日本公司50人晚宴。渡过5、6月非典阶段,餐厅管理日趋成熟,厨房出品控制日益完善,市场拓展也日渐扩大,8、9月份成功为法国食品协会,中欧管理学院,法国商会,罗氏制药,淳大万丽酒店举办宴会,及伍思凯的新专辑上海新闻发布会。
